Wet ingredients in a large bowl:
12 eggs, whisked
2 cups no-sugar-added applesauce
2 + 1/4 c. water or Whole milk
4 Tbsp honey
1/2 c. butter or coconut oil melted, or avocado oil

Dry ingredients in a medium bowl:
1 c. almond flour
1 c. coconut flour
1 c. walnuts, blended until finely chopped
1 c. brown rice flour
1 tsp chia seeds, whole or ground
1 tsp pink salt
1 tsp baking powder aluminum-free
1 tsp baking soda
1 tsp psyllium seed powder
2 Tbsp Stevia
1 Tbsp cinnamon

Heat cast iron skillet to Med Low for 2 min.
Add butter to the pan.
Use a cold cereal spoon to make small pancakes, 3 inches in diameter.
Cook, then flip to the other side to cook
Enjoy plain or with cranberry relish and whipped heavy whipping cream.
Enjoy with an egg on the side
To make Grain-free, remove brown rice flour and 1 c. water
To make dairy-free, remove the Whole milk and replace it with water or coconut milk
