Beta Carotene and the Assimilation of Activated Vitamin A

Vitamin A is one of the fat-soluble vitamins, along with Vitamin D, E, and K.

Most people in the USA are deficient in Activated Vitamin A due to

an underlying Vitamin D deficiency.

Beta-carotene is a precursor to Activated Vitamin A.  Beta-carotene is also called Provitamin A. Some may think the best way to help a Vitamin A deficiency is to eat plant sources of beta-carotene.  However, eating copious amounts of plant-based beta-carotene cannot supply a sufficient amount of activated Vitamin A for optimum health and may even hinder the assimilation of activated Vitamin A.

The body might absorb up to 75% to 100% of Vitamin A RETINOL, or activated Vit A from animal fat.   

The body might absorb, in most cases, only 10% to 30% of beta-carotene from plant-based foods [13,14]. Cooking and heat treatment [is beneficial to beta-carotene absorption in that it] can INCREASE the bioavailability of beta-carotene from foods [15].

The conversion of beta-carotene to an optimal blood level of Activated Vitamin A is difficult for the human digestive system. It is almost impossible for:

-Babies

-Children under 6 years old

-Diabetics

-Individuals with poor thyroid function

-Individuals with poor liver function

-Individuals with poor intestinal absorption

-Individuals with a high intake of sodium nitrites and nitrates

-Individuals exposed to pesticides and other toxins

-Individuals who consume an overabundance of plant-sourced beta-carotene

Interestingly, individuals who have a hard time making this conversion are the same individuals who most need Activated Vitamin A to help their stage in life (babies and children) or to help them maintain or treat their condition (diabetes, hypothyroidism, IBS, etc). If you are bothered by any of these conditions, a goal could be to increase blood levels of activated Vitamin A, along with Vitamin A's sister vitamins Vit D3 and Vit K2 to help manage the condition.

Beta carotene is a precursor to Activated Vit A. It is found in green grass, dandelions, alfalfa, and weeds. It is also found in deep green and deep orange vegetables such as spinach, carrots, kale, beets, sweet potatoes, cilantro, spirulina, etc. Foods that have beta-carotene are highly nutritious. Eating them wisely is good for the body.

However, the human GI tract runs into many barriers when trying to convert plant-sourced Beta carotene to Activated Vit A. Other animals are more efficient at the process. For example,

A chicken has a small brain and a very complex digestive system that includes a gizzard. Gizzards convert beta-carotene to activated Vitamin A very well.  A pasture-fed chicken eats fresh green growing grasses that contain beta carotene and wiggly bugs 🐛 that contain activated Vit A. The gizzard converts beta carotene to activated preformed Vit A and stores the preformed Vitamin A in the chicken's fat, ie, in the eggs, skin, dark meat, and organs such as the heart, liver, and brain. 

A cow has a small brain and a very complex digestive system that includes 4 stomachs. The 4 stomachs work all day every day to convert Beta carotene to preformed vitamin A. It is very efficient at this process. A pasture-fed cow eats green grass and hay and stores activated Vitamin A in its milk fat and fatty tissues, including its meat and organs.


The human body has a simple one-track digestive system with 1 stomach, instead of 4 stomachs, and no gizzard. It is not well equipped with the means to make the conversion.

There is one thing in our favor. The human brain is large, complex, and very intelligent. It is a powerful tool that can make up for our very simple stomachs. Cows and chickens have very small brains. Humans can use our powerful complex brain to seek learning by study and by faith to make good health decisions about what to eat, what not to eat, and when to eat in order to benefit our nutrient absorption and our health as a whole.


Items needed in the human body to convert BetaCarotene to Vitamin A:

-A copious amount of Healthy Fat in the diet

-Healthy levels of Thyroid Hormone

-Certain enzymes

-The fat-soluble vitamins Vit D & E.

One of the conditions for converting beta-carotene into activated Vitamin A is a copious amount of healthy fat. Add butter, cream, or coconut oil to the beta-carotene-rich food before consuming. Even if the above needs are met, only a small amount of BetaCarotene is converted to Activated Vit A


Unfortunately, even under optimal conditions, plant sources of beta carotene cannot supply a sufficient amount of Activated Vitamin A for optimum health. The solution to increasing your blood level of Vitamin A is to search out foods with activated Vitamin A from animal fat and make a plan for these foods to be in your everyday diet. 


Sources of Activated preformed Naturally-Occuring Vitamin A are:  

Grass-fed beef liver

grass-fed chicken liver 

wild-caught cod liver oil 

pasture-fed butter

pasture-fed tallow

pasture-fed high-fat dairy  

pasture-fed chicken eggs 

Other pasture-fed poultry eggs


The BEST sources of Activated preformed Naturally-occurring Vitamin A are: 

Grass-fed beef liver: Eat 3oz once a week

grass-fed chicken liver or chicken hearts: Eat 3oz once a week

wild-caught cod liver oil: 2 TBSP of CLO 1-2 times daily. 


Retest every 1-2 years to see the blood level gradually rise.

One can choose a daily dose or a very high weekly dose of naturally-occurring Vitamin A to fulfill the body's need for this vital vitamin. 


My favorite way to get Activated Vitamin A is a lemon-oil-flavored CLO called 'On Target Living Alaskan Cod Liver Oil Organic Lemon Flavor' 16.67 oz. I get it on Amazon for a good price and I've been taking it daily since Jan 2020. I have been very impressed with the results. Cod liver oil has numerous additional health benefits to the Activated Vitamin A, Omega 3s, DHA, EPA, and Vitamin D.  The lemon flavor in this product truly elevates the experience. The lemon oil not only masks the usual fishy taste but also adds a pleasant citrus note, making it much easier to swallow. I don't bother with a measuring spoon. I don't like the feeling of the oil on my lips as I remove the oily spoon from my mouth. I just open the bottle cap, tip my chin up, and drop the CLO as far back in my throat as possible.


I see many wonderful results as the blood levels of Activated Vitamin A continue to slowly rise.  The thing that I noticed years ago, when I first started taking it, was stronger more beautiful skin with much less acne. It helped me conceive a beautiful healthy baby boy in 2021.  I've seen many other general health benefits.


I don't have seasonal allergies, food allergies, autoimmune disease, thyroid issues, or chronic disease.  Increasing blood levels of Vitamin D3, Activated Vitamin A, and Vitamin K2 are large pieces to the puzzle in helping these conditions be more manageable.

Sources of Vitamin A and D are found together in nature. New and old research confirms this finding.

Research suggests that if a high level of preformed activated Vit A is built upon a good foundation of daily Vitamin D, there is no known toxicity level of activated Vitamin A. High amounts of activated Vitamin A without a certain amount of daily Vitamin D are rare, but it can lead to Vit A toxicity.


With that said, there is a toxic dose of Synthetic man-made Vitamine A palmitate and Vitamin A acetate. Lab blood test results are revealing. A lab results Normal range for synthetic Vitamin A Retinyl Palmitate is 0.00 - 0.10 ng/mL. The 0.0 number means our bodies need zero amount of this synthetic vitamin for good health. Look for man-made Vitamin A palmitate and Vitamin A acetate lurking in your processed Food Ingredients Lists. It is best to steer clear of these synthetic imposters.


Build your blood level of Vitamin D to at least 30ng/mL, then begin to build your level of activated preformed Vitamin A, this process could take months or, most likely, years. I used a trial-and-error approach. It took me 7 years to build my Vitamin D to an optimal level of 80-100ng/mL. I started 4 years ago building my blood level of activated Vitamin A and I am only beginning to see lab results in the Normal range. My hope is that this article will help you learn from my mistakes and streamline your efforts to build your Vitamin A, D and K more effeciently.


Vitamin K2 is the other fat-soluble vitamin that works in harmony with Vit D3 and Activated Vit A. 

The combination of Vitamin A and D with optimal amounts of Vitamin K2 is magic as far as health is concerned. Vitamin K2 seems to be one of the great missing links to optimal health, fertility, and prevention of miscarriage.



Vitamin A, D, and K Daily Recommendations

Step #1 Assess:

Ask your doctor for a lab test to assess levels of Vitamin D and A in the blood.


The Lab results below are from my vitamin D lab test from July 2023.

It looks like the lab is using 'Interpretive information from 2008 which says  Optimum Level: 30-80 ng/mL.  However, top neurologists and endocrinologists currently suggest an optimal level of Vitamin D is 80-100ng/mL (UofU Healthcare, Weston A Price Foundation, 'Grain Brain' by Dr Permutter, etc).


Your lab results might look similar to mine:


    INTERPRETIVE INFORMATION: Vitamin D, 25-Hydroxy     This assay accurately quantifies the sum of vitamin D3, 25-hydroxy and vitamin D2, 25-hydroxy. 


    18 years and older:     Deficiency: Less than 20 ng/mL     Insufficiency: 20-29 ng/mL     Optimum Level: 30-80 ng/mL     Possible Toxicity: Greater than 150 ng/mL 


    0-17 years:     Deficiency: less than 20 ng/mL     Optimum level: greater than or equal to 20 ng/mL*     *(Wagner CL et al. Pediatrics 2008; 122: 1142-52.)


    Your result: Vitamin D 25 OH 72ng/mL

    Results in Normal range: 30 - 80 ng/mL 


Do not be fooled. A common 'normal' lab range is not the current recommended 'optimal' level of vitamin D which is 80-100 ng/mL.

A normal lab range of activated Vitamin A RETINOL is 0.30 - 1.20 mg/L.

This normal range is most likely lower than optimal levels of Vitamin A.

However, aiming for the higher end of normal is a very good start.


I don't have much information on Vitamin K2 blood tests. I have not yet requested one from a doctor.



Step #2 Build Vitamin D:

Build your blood level of Vitamin D.

Most people in the USA are very deficient in Vitamin D. America is located too far from the equator to soak up enough Vitamin D from the sun. This has led to Vitamin D being one of the most prominent Vitamin deficiencies in the USA. It is no respecter of persons. A lack of optimal levels of Vitamin D affects almost all adults, children, babies, and fetuses in the USA. For this reason, find a good Vitamin D3 supplement for life. Research suggests that vitamin D2 is less effective than vitamin D3 at raising blood levels of vitamin D (https://www.healthline.com/nutrition/vitamin-d2-vs-d3)


- If your lab blood level is more than 50 ng/mL, then take 5000 IU of Vitamin D3 1x/day and retest at the lab in 6-12 months.

- If your blood level is less than 50 ng/nL, which is most likely, then take 10,000 IU of Vit D3 1x/day and retest at the lab in 6-12 months. If you live in the USA and have not been taking a daily Vitamin D supplement, then you most likely fit in the range of 10-25 ng/mL, with or without a blood test.

- After the optimal blood level of 80 ng/mL is reached and you are still living in the USA, aim for a maintenance dose of 2000 - 4000 IU 1x/day for a lifetime and retest every 3-5 years or so.



Step #3 Build Vitamin A and Vitamin K2

Vitamin D helps the assimilation of Vitamin A and K. People deficient in Vitamin D are also most likely deficient in Vitamin A and K. If Vitamin D is not found in normal to optimal levels in the blood, Vitamin A and K are also most likely to not be at normal or optimal levels. Most Americans fall into this category.


The goal of building Vitamin A to the higher-end-of-normal lab range might take a person quite a few years to achieve as it has for me. I had been taking 1 tsp Cod Liver Oil, as recommended on the bottle, for a year and a half since Jan 2020 so I decided to check my Vit A blood level for the first time. I expected great results.


My first blood test of Vitamin A RETINOL, or preformed activated Vitamin A, was July 2021.

My result was 0.36 mg/L

    Normal range: 0.30 - 1.20 mg


This # was surprising to me. I My test result was 0.36 mg/L, just barely in the lab's normal range! After the July 2021 results, I started 2 Tbsp CLO per day. My most recent lab # in 2023 is 0.54 mg/L. CLO is working to increase the #, but it is a lot slower process than I expected.


Take a daily Activated Vit A + Vit K2 supplement of high vitamin fermented cod liver oil + butter oil (and/or 3 oz grass-fed liver once/week) .

Take with at least 1000-2000 IU/day of Vit D or with a high blood level of Vit D

in the range of 50-100 ng/mL



Foods with Vitamin K2 are hard to find.

My fav Vit K2 foods are grass-fed butter oil and homemade lacto-fermented vegetables.

Sauerkraut is my favorite fermented vegetable. Store-bought sauerkraut is not lactofermented and therefore does not contain Vitamin K2. The longer the sauerkraut is allowed to age, the more Vitamin K2 there will be.

Authentic Eritrean INJERA sourdough flatbread

My neighbor and good friend grew up in Eritrea, Africa.  She taught me how to make her native food staple, injera.  Injera is a sourdough flatbread and is made from teff, a gluten-free super grain native to Ethiopia. Injera is thicker than a crepe and thinner than a pancake and has a delightfully sour taste. Natives use injera as a plate and a spoon. The delicious salty flavors of the veggies and stews complement the sourness of the injera.

Ingredients

  • cups teff flour, brown or ivory , or substitute a portion of it with some barley or wheat flour
  • 1 cups all-purpose white flour
  • Note: If you're new to making injera I recommend using a combination of teff and wheat as 100% teff is more challenging to work with
  • cups cold tap water
  • 1+ cup cold tap water at the end

Instructions

  • *See Daring Gourmet blog post for detailed instructions*
  • In a large mixing bowl or small bucket, stir the 2 flours together. Then add 6 cups water. Add starter if you have it. Starter is 8oz of refrigerated batter from a previous batch of injera.
  • Stir with your hands. It should be a very thin liquid. 
  • Use an extra 1 cup of water to clean the sides of the bowl as you are mixing the last little bit, to make a total of 7+ cups of water in the batter. The inside sides of the bowl should be very clean
  • Loosely place a lid or some plastic wrap on the bowl (it needs some air circulation, you just want to keep any critters out). Let the mixture sit undisturbed at room temperature for 3-4 days (the longer it ferments, the deeper the flavor). Check it periodically. The dough should sink. The liquid should rise to the top. Depending on what kind of flour you're using, you may need to add a little more water if the mixture is becoming dry.  

  • At the end of fermentation, the mixture should be fizzy and double in size. The color will be very dark. Depending on the humidity, a layer of aerobic yeast will have formed on the top. Aerobic yeast is a normal result of fermentation.  If however your batter forms mold on it, it will need to be discarded. Pour off the yeast/mold and as much of the liquid as possible. A clay-like batter will remain. Give it a good stir.
  • In a small saucepan, bring 1 cup of water to a boil. Stir in 1/2 cup of the injera batter, whisking constantly until it is thickened. This will happen pretty quickly. Then stir the cooked/thickened batter back into the original fermented batter. Add some water to the batter to thin it out to the consistency of crepe batter. Then add more water to make it thinner than crepe batter. I added about 3/4 cup water after the 1 cup boiling water but this amt will vary from batch to batch. The batter will have a sweet-soured nutty smell.
  • Let rest on countertop for 4-12 hours. 
  • Heat a non-stick skillet or crepe pan over medium heat. Depending on how good your non-stick pan is, you may need to very lightly spray it with some oil. Spread the bottom of the skillet with the injera batter - not as THIN as crepes but not as THICK as traditional pancakes.
  • Allow the injera to bubble and let the bubbles pop. Once the bubbles have popped, place a lid on top of the pan and turn off the heat. Let the injera steam cook for a couple or so more minutes until cooked through. Be careful not to overcook the injera or they will become gummy and soggy. 
  • Remove the injera with a spatula and place on breathable uncoated paper plate. Let cool, then fold into quarters.  
  • Repeat.
  • Eat fresh,  Store covered at room temp for 4-5 days, refrigerate, or Freeze

Low Carb Nut-Flour Pancakes (Gluten -free and Grain-Free )

Wet ingredients in a large bowl:

12 eggs, whisked

2 cups no-sugar-added applesauce

2 + 1/4 c. water or Whole milk

4 Tbsp honey

1/2 c. butter or coconut oil melted, or avocado oil

- - - - -

Dry ingredients in a medium bowl:

1 c. almond flour

1 c. coconut flour

1 c. walnuts, blended until finely chopped 

1 c. brown rice flour 

1 tsp chia seeds, whole or ground 

1 tsp pink salt

1 tsp baking powder aluminum-free

1 tsp baking soda

1 tsp psyllium seed powder

2 Tbsp Stevia

1 Tbsp cinnamon

- - - - -



Heat cast iron skillet to Med Low for 2 min. 

Add butter to the pan. 

Use a cold cereal spoon to make small pancakes, 3 inches in diameter. 

Cook, then flip to the other side to cook 

Enjoy plain or with cranberry relish and whipped heavy whipping cream.

Enjoy with an egg on the side


To make Grain-free, remove brown rice flour and 1 c. water

To make dairy-free, remove the Whole milk and replace it with water or coconut milk

What is an unhealthy fat? 

A fat that has been highly processed, has little to no nutritional value, and has devastating health consequences

Any commercial brand of cooking oil, even if they are labeled organic:

   -soybean oil

   -corn oil

   -cottonseed oil

   -canola oil

   -peanut oil

   -safflower oil

   -grapeseed oil

   - sunflower oil

   -rice bran and wheat germ oils



Indian Madras Lentils Recipe

  Brown Lentils, red beans, and spices in a creamy tomato Sauce


Ingredients:

2 lbs brown lentils

4 cans diced tomatoes (15 oz each can)

2 cans light red kidney beans (15oz each can)

2 large onions, diced 

8 garlic cloves, chopped - or 1 tbsp garlic powder

6 Tbsp cumin powder

2 Tbsp chili powder

2 tsp ginger powder

1 cup butter

2 cups heavy cream - or 1 can evaporated milk 14 oz


Simmer lentils, tomatoes, onions, and garlic in water for 2 hours. 

Use an immersion blender to make lentils smooth. 

Add spices, red beans, butter, and heavy cream. Simmer on low for 30 min. 


Serve as a soup or over brown hot rice with lots of fresh toppings. 


Toppings: 

cilantro

green onion

finely diced white onion

juice from one lemon wedge

What are the healthy fats?

What price does one pay for optimal health? There is no price high enough. Good health takes effort and work. Healthy fats are no different.

Two-thirds of the human brain is made of fat. Increase memory and cognition and fight depression, anxiety, and dementia by eating a diet high in healthy fats. Fats, not glucose or carbohydrates, are the human brain's preferred fuel. Healthy fats and their nutrients also help regulate hormones in the body. This includes, among many others, the digestion hormones: insulin and leptin, and the thyroid hormones

Healthy Fats earn the badge due to their high nutrient density.  

Healthy Fats contain one or more essential nutrients: 

   - Omega 3 Fatty Acids, including DHA, DPA, and EPA strengthen gut and brain health and boost the immune system

   - Omega Fatty Acids 5, 6, 7, 9 &11 are good for heart and brain health and mood regulation

   - Medium chain fatty acids (MCFAs)

   - Polyphenols (antioxidants)  

   - The Fat-soluble vitamins: Vit D3, Activated Preformed Vitamin A, Vit E, and Vit K2:

   - Vitamin D3 is not a Vitamin, but a hormone. It is essential for fighting depression, anxiety and dementia and boosting overall happiness. It also aids in balancing other hormones such as the digestion hormones: insulin, leptin and ghrelin, the sex hormones: estrogen  progesterone, and testosterone, and the brain hormones: serotonin, oxytocin, dopamine, adrenaline, and noradrenaline. Endocrinologists and neurologists say optimal levels of Vit D is 60-90 ng/mL. It is recommended that kids and adults living in the US take a VitD3 supplement daily and check Vit D blood levels at the next doctor's appointment.

   - Activated Preformed Vitamin A Retinol. Vit A helps Vit D do everything that Vit D is good at doing. People in the US that do not have optimal levels of Vit D most likely also do not have optimal levels of Vit A retinol. Food sources of preformed Vit A are hard to find. Study it out and make it happen. The best food source is organic pasture fed animal liver. If you're like me and cant stomach liver, choose the next best food source, Cod liver oil with added lemon oil or cinammon oil for flavor.  Choose foos sources carefully, a bag of carrots or a can of tomatoes says it has Vitamin A, but this is not true. Vegatables contain carotenoids, the precursor to preformed Vit A.  The human body has a single-track digestive system and is very inefficient at converting carotenoids into Preformed Activated Vit A. The only source of preformed Vit A Retinol is animal liver and animal fat. One must eat animal fat to get an optimal level of the vitamin.

The 3 most important healthy fats essential for the brain and body are Extra virgin olive oil, MCFAs such as Organic unrefined coconut oil, and the Omega 3 fatty acid DHA

First, Organic non-GMO extra virgin cold-pressed Olive Oil.  

"Olive oil is rich in polyphenols, potent antioxidants, that have been shown to reverse cognitive deficits brought on by both the natural process of aging and disease. Include 2 teaspoons of raw olive oil daily," says neurologist Dr David Perlmutter.

Second,  Medium Chain Triglyceride (MCT) Oil or Medium chain fat acids (MCFAs) 

MCT oil is found in coconut and unrefined Coconut Oil.  It is a form of saturated fatty acid that is a powerful super fuel for the brain. It also has the benefit of reducing systemic inflammation. Add it to your daily diet.  

"Coconut oil contains polyphenols. It goes one step further than olive oil by directly improving the ability of neurons and brain cell membranes to perform their cellular functions. Include in your diet 1 TBSP of MCT oil or 1-2 TBSP of raw Organic Unrefined Coconut Oil daily," says neurologist Dr David Perlmutter. 

An article from veryhealthy.life states: 

"The MCFAs present in unrefined coconut oil enhances brainpower and memory. MCFAs are absorbed right away in the body and don’t have to use insulin. MCFAs can fuel brain cells very efficiently. One study showed that all the patients had an improvement in memory function after taking MCFAs from unrefined coconut oil daily. Scientists are discovering more benefits of coconut oil every month. Start with coconut oil, if you want to incorporate more superfoods into your diet."

 MCFAs are in very few foods. Other sources of MCFAs besides unrefined coconut oil are organic palm kernel oil, a minimal amount in a few dairy products, and MCT oil supplements.

Third, the superstar Omega 3 fatty acid DHA. 

DHA is very favorable to gut and brain health. DHA strengthens the gut microbiome and boosts BDNF in the brain. DHA strengthens the immune system. It is a powerful antioxidant, more powerful than Vitamin C.  Two-thirds of the brain is made of fat. One quarter of the fat part of the brain is DHA.  If there is no fish, marine algae, or seaweed in the diet, then there is no DHA in the diet.

Dr Perlmutter recommends that adults take 2000 - 3600 mg of DHA daily in divided doses. I take 1500mg in the morning and 1800mg at night in the form of a CVS DHA fish oil capsule supplement. I like that has minty peppermint oil as one of its ingredients. I also have 2 different Cod liver oils - lemon flavored 'On Target Living' CLO and cinammon-flavored 'Green Pastrue' COL.



Other healthy fats are:

Sesame oil

All soaked raw Nuts, except peanuts (peanuts are not a nut but a legume)

Organic Nut Butters, except peanut butter

Almond milk

Flaxseed

Sunflower seeds

Pumpkin seeds 

Sesame seeds 

Chia seeds

Avocados

Coconuts

Olives 

Wild-caught small anchovies

Wild-caught small sardines

Wild-caught oily fish such as salmon, trout and herring

Cod liver oil

DHA Fish oil supplements

Vitamin D3 supplements



Meats and Animal Fat

 The neurologist, Dr. David Permutter, warns, "Meat should be treated as a condiment, not as the mainstay of your meals." If your diet allows for meat, embrace some options and avoid others. Some meat products have nutrient-dense healthy fats but most don't.

A word about meats. If you are following D&C 89's Word of Wisdom, meats should not be used, only in times of winter, or of cold, or of famine. I interpret this to mean that I should avoid eating meat in the summer, in warm weather, and in times of plenty when there is not a scarcity of food. While watching the temple endowment movie on the creation of the earth, fish and birds were placed on the Earth long before large animals. I felt impressed that, if I eat meat, I should only eat meat from animals that weigh less than I do. Also, I could honor the death of the animal and its sacrifice of death by using ALL its edible parts, throwing away little. 

High nutrient-dense meats have an Omega 6 to Omega 3 ratio of 4:1 or 3:1. Embrace high nutrient-dense meats and animal fats in a limited fashion. Limit your intake of these meats to the body's nutritional needs. The Omega 3 fatty acid, DHA, is exceptionally anti-inflammatory and increases brain health. The best sources of high DHA are animal sources: fish, fish oil, and fish liver oil.

Nutrient-dense meat come from animals that are fed their natural diet in their natural environment. Most weigh less than a healthy adult. Use the whole animal. Reverence the death of the animal by eating all its edible parts, wasting very little. Eat the healthy fats found in the organs, skin, and fat. Further extract the healthy fats in meat by boiling the bones, heads and feet to make a broth for soup. High nutrient-dense Meats include:

- Pasture-fed Poultry such as chicken, turkey, duck, quail etc.  

- Pasture-fed Lamb, lamb liver*, lamb tallow, and bone broth

- Pasture-fed Goat, goat liver*, goat tallow, and bone broth

- Wild game such as deer, elk, and bison and some breeds of grass-fed beef

- Sustainable sources of Wild-caught Fish that are low in mercury and high in Omega fatty acids. The American Heart Association recommends eating healthy fish at least two times per week:

--- Wild-caught oily Fish such as trout, herring, and Alaskan salmon.   Eat the whole fish. The most healthy fat of the fish is found in its head and brain. The Chinese create a fish head broth. They toss the fish heads before serving the soup.

--- Wild-caught medium Fish such as cod, tilapia, mahi-mahi, Atlantic mackerel, perch, Alaskan Pollock, and Artic char

--- Wild-caught small Fish such as Anchovies, Sardines, Clams, Oysters, and Scallops. Toss them on pizza and in soups and stews. Smaller fish and bivalves don't have time to accumulate as many contaminants as larger carnivorous fish

- Cold-pressed Fish oil Supplements have DHA, EPA Omega 3 and 9. Try a variety that has added peppermint oil or lemon oil to hide a fishy after taste 

-Wild-caught cold-pressed Cod liver oil is anamazing superfood. It has the all Omegas of a Fish oil supplement and also includes naturally-occurring Vit D3 and performed Vit A. Cod is a medium-size fish and contains less mercury than the large fish tuna. Take 1 tsp - 1 Tbsp everyday. To mask the fishy taste, try a variety that has added peppermint oil, lemon oil or cinammon oil 


Avoid these meats and animal fats.  

Avoid meats that come from animals that are not fed their natural diet, are not raised in their natural environment, or are altered by people or companies to get gain. This meat has an Omega 6 to Omega 3 ratio of 15:1 or 20:1.  The typical American diet tends to contain 14 to 25 times more omega-6 fatty acids than omega-3 fatty acids. Meats with high Omega 6 is grossly inflammatory and should be avoided.

Many researchers believe that a diet high in Omega 6 fat acids is a significant factor in the rising rate of inflammatory disorders in the United States.

 Similar to humans, animals store chemicals and waste in their fat tissues. Also, avoid eating the fat from grain-fed, waste-fed, genetically modified, or commercially-altered animals. Grain-fed and waste-fed animals may grow faster toward maturity but, in the end, produce a low nutrient-dense meat and a toxic inflammatory meat.  Commercial producers add antibiotics, IGF-1, and growth hormones (including estrogen hormones) to their meats, most producers also hurt the environment. Producers use antibiotics as a prophylaxis to help prevent sickness. Eating meat with extra antibiotics hurts our gut and brain health.  Producers also pump meat animals with estrogen, or more recently, genetically modify the animal to include more estrogen in its genes.  Estrogen helps the animal grow to slaughter size faster. This is quick money for the producer. If the producer pumps the animal with estrogen, the FDA requires that they add estrogen to the Ingredients List on the label.  If the producer genetically modifies the baby animal fetus to include more estrogen in its genes, they are not required to report it. It is harmful either way. Eating meat with extra estrogen causes many problems in the human body. Women may develop menstrual cycle pain, infertility, or other estrogen-dominance issues. Men who get high amounts of estrogen in their diet might struggle with enlarged breasts and feelings of womanhood.  Large animals such as pigs and cows raised commercially harm the environment. Large animals hurt land and resources when being raised and there is a huge excess of animal waste when slaughtered. Avoid these meats:

- Commercial Pork - pork chops, sausage, bacon, bacon grease, etc. Avoid the fat, too

- Commercial Beef - steak, beef roast, ground beef. Avoid the fat, too

- Waste-fed pasture Pork and its fat

- Waste-fed pasture Beef and its fat 

- Commercial-raised poultry

- Commercial deli meat - turkey, chicken, roast beef, etc

- Large fish due to mercury content, such as Tuna, shark, tilefish, and king mackerel 

- All Farm-raised fish including Atlantic salmon



Dairy and eggs

Some dairy and egg products have nutrient-dense healthy fats. If your diet allows for dairy and eggs, embrace some options and avoid others. 

Dairy and eggs to embrace:

- Cheeses - except for blue cheeses due to their gluten content

- Whole milk straight from Pasture-fed cows - Vit D, Vit A, Vit K

- Commercial Whole milk is not as quality as pasture-fed whole milk, but better for your brain than commercial low-fat milks. Choose whole milk that has naturally occurring Vit A listed in the Nutrition Facts but does NOT list Vit A in the list of ingredients*

- Darigold Half and Half that has Vit A listed in the Nutrition Facts but does NOT list Vit A in the list of ingredients*

- Darigold Whipping Cream that has Vit A listed in the Nutrition Facts but does NOT list Vit A in the list of ingredients*

- Homemade plain yogurt made with Darigold Half and Half or pasture-fed Whole Milk

-Pasture-fed butter is nutrient-dense if it has a deep yellow color, which means in contains preformed Vitamin A

-Commercial Butter that has Vit A listed in the Nutrition Facts but does NOT list Vit A in the list of ingredients. Good brands are CostCo Kirkland butter, LandOLakes, etc.*

-Ghee

- Eggs are a healthy fat and protein and power houses of Nutrition:

- Eggs, especially egg yolks, from pasture-fed Poultry or backyard Poultry are the most nutrient-dense kind of eggs because you control what the poultry is eating. Chickens in their natural habitat eat grass, bugs, and little rocks in the sunshine. Look for nutrient-density in the color of the yolk. Dark orange yolks have the highest nutrient-density

-Commercial Eggs are still high in protein but contain less Omegas and fat-soluble vitamins. They have pale yellow yolks but are better than no eggs at all.

- if your diet excludes eggs, ensure that you are getting high amounts of Omegas, Vit D3, and preformed Vit A from another source such as Cod liver oil.


Dairy to avoid:

- Commercial low-fat milk, 2%, 1%, and skim due to its low-fat content and due to the man-made synthetic Vit A palmitate found in the list of Ingredients

- Commercial sugar yogurt due to its high added sugar content and the man-made synthetic Vit A palmitate or Vit A acetate found in the list of Ingredients. Avoid commercial sugar yogurt even if it says it is a good source of VitD, it is not.

- Blue cheeses due to their gluten content

- Butter that has no Vitamin A listed in the Nutrition facts (brands to avoid: WalMart, Kroger, Winco, etc)

- Heavy whipping cream and Half and half that has no Vitamin A listed in the Nutrition facts (Brands to avoid: WalMart, Kroger, Winco, etc)



*Vitamin A is a super amazing fat-soluble vitamin.  Populations that need activated preformed naturally-occurring Vitamin A the most are fetuses, babies, kids 0-5, pregnant and breastfeeding mothers, anyone with an autoimmune disorder or autoimmune disease, and anyone diagnosed with a chronic disease.  

However, there are some words of caution. Food products that have Vitamin A listed in the Nutrition Facts and also have Vit A listed in the list of ingredients means that man-made synthetic Vit A palmitate or Vit A acetate was added during processing and that Vit A is not naturally occurring in the product. Also, commercially-made Vitamin A Retinyl palmitate or acetate supplements are not absorbable by the body, can be toxic in large doses, and should be avoided. It is best to obtain activated Vitamin A from food sources.

Naturally-occurring Vitamin A, or activated preformed Vitamin A Retinol, helps every system of the body from the brain, heart, eyes, skin, epithelial layers, joints, teeth, bones, muscles, and autoimmune disorders to balancing hormones, fertility, healthy pregnancy, and healthy fetus. Activated Vit A has no known toxic dose if taken with a foundation of its sister vitamin: Vitamin D in the ratio of 1:5 or 1:10.  Look for performed Vitamin A Retinol in foods that are high in healthy fat

One of the most convenient and tasty food sources of activated preformed naturally-occuring Vitamin A is Alaskan Cod liver oil (CLO).  My favorite brands of cod liver oil are found on Amazon.  'On target Living' has a lemon flavored CLO that contains DHA, DPA, EPA, Vit D and Vit A.  I got tired of cleaning the oily spoon. Now I tip the bottle toward the back of my throat, pour, and swallow. 'Green Pasture' has a cinammon-flavored CLO that contains all the nutrients of the On Target Living CLO and also includes Butter oil, a great source of the fat-soluble Vitamin, Vit K2.  Cinnamon oil contains eugenol which strengthen gut health. I use a 2 tsp syringe to send it to the back of my throat and swallow. I use both the lemon-flavored and the cinnamon-flavored CLOs alternating every other day. I especially made it a priority to use both when I was trying to become pregnant,  pregnant, or breastfeeding. 

The absolute best food sources of activated preformed naturally-occuring Vitamin A is grass-fed beef calves liver, grass-fed chicken liver, and fish liver. But I confess, I cannot stomach eating liver. Food sources that have a good but limited amount of activated Vit A are pasture-fed butter, pasture-fed high-fat heavy whipping cream and Half and Half, pasture-fed chicken eggs.  Babies, kids, teens, and adults alike need Vitamin A. Choose a daily dose or a high weekly dose of naturally-occurring Vit A. 



Strep Throat Remedy for the Prevention and Treatment of Strep Throat

The recipe works. It fights any infection bacterial, viral, or fungal:


½ c. BRAGG Apple Cider Vinegar with the mother

1/4 c. honey, add more to taste

¼ c. fresh-squeezed lemon juice

½ - 1 tsp cayenne pepper powder, more is better

1 fresh garlic clove, minced

½ tsp ginger powder, or fresh ginger root minced (optional)

2 c. cold water


Mix in a glass 32oz quart jar. Do not double recipe in the jar. Refrigerate. 


IMMEDIATE ACTION - At first sign of sore or itchy throat:

  1. Drink 8-12 oz water, to boost the immune system by staying hydrated 

  2. Shake or stir concoction

  3. Gargle 2-3 tsp for 30 sec then swallow

  4. Gargle a 2nd 2-3 tsp for 30 sec then swallow.  

  5. Wait 10 minutes before eating or drinking to allow the cayenne/ACV to sit on the tonsils and back of the throat

Depending on the severity of symptoms, Repeat every 30-60 min during the day and, if up at night, gargle in the middle of the night for the first 24-48 hours of the sore or itchy throat


To prevent the recurrence of sore throat, Gargle 2-4x/day for the next 10 days (instructions are similar to taking a prescription of antibiotics - 2x/day for 10 days - but without the visit and payment to the doctor and without the terrible side effects of systemic antibiotics )



PREVENTION ACTION - There is also the option of taking this concoction regularly on an empty stomach 1-2x/day to increase the pH of the blood which aids digestion, strengthens the immune system, and fights any infection bacterial, viral, or fungal:
  1. Drink 8-12 oz water

  2. Shake concoction

  3. Gargle a Tbsp for 30 sec then swallow

  4. Gargle a 2nd Tbsp for 30 sec then swallow.  

  5. Wait 10 minutes before eating or drinking.

  6. Repeat 1-4 times a day 


My husband and I have 10 kids at home right now.  2 of them are toddlers and 8 of them attend public school. There is a wide range of sicknesses shared in our household. I have been a dental hygienist for 20 years. I can't work in people's mouths sniffling and coughing. 

How do I take care of contagious sick kids and share their same living space 24/7 without also getting sick? 

Answer: There are 100+ pieces to the puzzle of how to boost the immune system.  Much of the secret lies in taking daily immune-boosting supplements, action taken the first few days of the child's first symptoms, and action taken in the first 24-48 hours of a caretaker's first symptoms. 


This strep throat remedy really works. I use it in combo with fresh garlic remedy to further conquer bad bacteria and viruses. 


Eat fresh onion and fresh garlic everyday (fresh homemade salsa is a good start :)


Fresh Garlic Remedy:

Fresh Garlic is a powerful antivital, antibacterial, anti fungal. Chop a fresh garlic clove with a knife (dont use a press), put it on a spoon, let it sit on the spoon for 10 min for allicin to form. Swallow it like a pill with 8-10 oz water. Just swallow, Do not chew. Eat a slice of orange after to cleanse the palate. Take a zinc supplement daily to strengthen the effects of the allicin. Do this 2-5x a day til the cold virus subsides. 


Avoid sugar and gluten for as long as you want to strengthen the  immune system

The goal of this blog is to post recipes to help us live strong and capable. These recipes support a diet that will strengthen mental and physical health, boost the immune system, and help prevent and treat many of Autoimmune disorders and diseases and Chronic diseases that afflict the body. 

In order for a recipe to make the cut, It must contain:
